Fried Fish & Grilled Pineapple Salsa

Ingredients (1 big binge bowl)

  • Leftover cooked rice – 1½ cups (cold is perfect)

  • Frydays Fish n Chips fried fish – 1–2 pieces

  • Majic Jar Grilled Pineapple Salsa – 3–4 tbsp (don’t be shy)

  • Butter or oil – 1½ tbsp

  • Garlic – 1 tsp, finely chopped

  • Green chilli – optional, finely chopped

  • Soy sauce – ½–1 tsp

  • Black pepper – to taste

  • Spring onions / coriander – optional

  • Lemon wedge – Must


Quick Method

  1. Crisp the fish

    • Heat a pan with a few drops of oil.

    • Chop fish into chunky bites and pan-toss on high heat till edges are crispy again.

    • Remove and keep aside.

  2. Smash-fry the rice

    • Same pan, add butter/oil.

    • Add garlic + chilli, sauté 10 seconds.

    • Add cold rice and press it down slightly.

    • Let it sit untouched for 30–40 seconds so it gets crispy bits.

  3. Make it addictive

    • Add soy sauce + black pepper.

    • Stir in Majic Jar Grilled Pineapple Salsa and toss hard for 20–30 seconds.

  4. Finish

    • Throw fish back in.

    • One final toss, squeeze of lemon if using.

    • Top with spring onions.


Lazy Upgrades (Still 2 Minutes)

  • Crack an egg into the rice before adding salsa → fish & pineapple egg rice

  • Add cheese slice at the end → dirty binge version

  • Drizzle chilli oil or peri-peri mayo if you’re feeling reckless
